A word from the Chef:

Eggplant is one of my "must-have" kitchen ingredients because it can be used in such a wide array of dishes, from appetizers to entrees. Eggplants absorb seasonings well, and their size and texture allows you to prepare different types of recipes. For instance, larger eggplants work well in recipes such as eggplant parmesan, and as a fabulous meat alternative in grilled eggplant burgers.

Likewise, smaller varieties like Hindu and Japanese can be used in recipes such as grilled eggplant skewers or caponata, a classic Italian favorite.  I enjoy cooking with the smaller varieties because of the tenderness of the flesh and smooth skin.
