Eggplants possess many nutritional benefits. They are naturally low in calories, are fat free and they are an excellent source of dietary fiber. They are also high in potassium, and contain iron and protein.
Some eggplant varieties are also high in chlorogenic acid, which is a type of phenolic and a very potent antioxidant. Antioxidants are components that protect cells from damage caused by free radicals. According to researchers from the Agricultural Research Service at the US Department of Agriculture, certain eggplants possess more phenolic properties than others. The Black Magic variety, for instance, has nearly three times the amount of phenolics than other eggplant cultivars that were studied. The same study suggests that while these phenolics are nutritious, they are also the reason eggplants have a bitter taste. Scientists are currently working on finding a way to bring consumers eggplants that are balanced with the right amount of nutritients and great taste.
