Creole Eggplant Dish

Ingredients:

  • 1 med eggplant, peeled and cut in ½” slices
  • 1/3 cup whole wheat flour
  • 2 ½ cups tomato puree
  • 2 cups water
  • 1 ½ cups mushrooms, chopped
  • 1 med onion, chopped
  • 1 cup green chili salsa
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • 3 cups fresh okra, chopped

Instructions:

  1. Soak eggplant in cold water for 30 minutes. Meanwhile, combine tomato puree, water, mushrooms, onions, salsa, Italian seasoning and garlic powder in a large saucepan. Bring to a boil.
  2. Reduce heat and simmer, for 20 minutes. Add okra and cook for another 5 minutes; set aside.
  3. Preheat oven to 350 F. Drain eggplant and dry slices with paper towels. Coat eggplant slices in flour and place them on a baking sheet until browned, approx. 10 minutes.
  4. Increase temperature to 375 F. Line a 9 x 11 inch baking dish with eggplant slices and pour okra mixture over them. Bake for 30 minutes. Serves 8.
