Easy Grilled Eggplant
- 1 lg eggplant, peeled and cut into ½ in rounds
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp minced garlic
- ½ tsp salt
- ¼ tsp dried oregano
- ¼ tsp dried basil
- Preheat grill to med-high heat.
- In a small bowl, mix oil, vinegar, garlic, oregano, basil and salt.
- Brush eggplant slices with oil mix and let stand for 10 mins.
- Arrange eggplant slices on grill and cook until tender for 15-20 mins., turning occasionally.
