Easy Grilled Eggplant

Ingredients:

  • 1 lg eggplant, peeled and cut into ½ in rounds
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp minced garlic
  • ½ tsp salt
  • ¼ tsp dried oregano
  • ¼ tsp dried basil

Instructions:

  1. Preheat grill to med-high heat.
  2. In a small bowl, mix oil, vinegar, garlic, oregano, basil and salt.
  3. Brush eggplant slices with oil mix and let stand for 10 mins.
  4. Arrange eggplant slices on grill and cook until tender for 15-20 mins., turning occasionally.
