Hearty Meat and Vegetable Soup
Ingredients:
- 4 tbs olive oil
- ½ tsp pepper
- ½ tsp ground nutmeg
- 1 tsp salt
- ½ cup small seashell or macaroni pasta
- 1 tsp dried parsley
- Grated parmesan cheese
- 1 med onion, chopped
- 1 lb lean ground beef
- 1 med eggplant, diced
- 1 clove garlic, minced
- ½ cup carrots, chopped
- ½ cup sliced celery
- 1 lge can chopped tomatoes
- 2 (14 oz) cans beef broth
Instructions:
- In a pot, heat olive oil, add onion and saute. Add meat and stir well to separate meat over med-high heat until meat browns.
- Add eggplant, garlic, carrots, celery, tomatoes, beef broth, salt, pepper and nutmeg.
- Reduce heat and simmer for 10 minutes, covered, until pasta cooks. Top with parmesan cheese. Serve hot.
