Hearty Meat and Vegetable Soup

Ingredients:

  • 4 tbs olive oil
  • ½ tsp pepper
  • ½ tsp ground nutmeg
  • 1 tsp salt
  • ½ cup small seashell or macaroni pasta
  • 1 tsp dried parsley
  • Grated parmesan cheese
  • 1 med onion, chopped
  • 1 lb lean ground beef
  • 1 med eggplant, diced
  • 1 clove garlic, minced
  • ½ cup carrots, chopped
  • ½ cup sliced celery
  • 1 lge can chopped tomatoes
  • 2 (14 oz) cans beef broth

Instructions:

  1. In a pot, heat olive oil, add onion and saute. Add meat and stir well to separate meat over med-high heat until meat browns.
  2. Add eggplant, garlic, carrots, celery, tomatoes, beef broth, salt, pepper and nutmeg.
  3. Reduce heat and simmer for 10 minutes, covered, until pasta cooks. Top with parmesan cheese. Serve hot.
