Ratatouille
Ingredients:
- 3 tbs olive oil
- ½ tsp black pepper
- 2 sm onions, chopped
- 4 garlic cloves, minced
- 1 eggplant, diced
- 3 zucchini, cut into ½ in rounds
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 tsp dried oregano
- 1 tsp salt
Instructions:
- In large pot, saute onions in olive oil until caramelized over med heat. Add garlic and saute, but do not brown.
- Add eggplant, zucchini, bell pepper, tomato, oregano, salt and pepper.
- Mix well and stir occasionally to prevent sticking and cook until vegetables are tender.
- Serve warm. Top with Parmesan cheese.
