Ratatouille

Ingredients:

  • 3 tbs olive oil
  • ½ tsp black pepper
  • 2 sm onions, chopped
  • 4 garlic cloves, minced
  • 1 eggplant, diced
  • 3 zucchini, cut into ½ in rounds
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 tsp dried oregano
  • 1 tsp salt

Instructions:

  1. In large pot, saute onions in olive oil until caramelized over med heat. Add garlic and saute, but do not brown.
  2. Add eggplant, zucchini, bell pepper, tomato, oregano, salt and pepper.
  3. Mix well and stir occasionally to prevent sticking and cook until vegetables are tender.
  4. Serve warm. Top with Parmesan cheese.
