Spicy Eggplant Cake


  • ½ cup butter
  • ½ tsp ground clove
  • ½ cup chopped nuts
  • 3 oz. cream cheese, softened
  • 1 cup confectioners' sugar
  • ½ cup sugar
  • ½ cup honey
  • 2 eggs
  • 2 cups grated eggplant
  • 1 cup white flour
  • ½ cup whole wheat flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • Instructions:

    1. Pre-heat oven to 350 degrees.
    2. Whip the butter and add the sugar and honey. Beat in eggs, grated eggplant, white and whole wheat flours, salt, baking powder, cinnamon, nutmeg, clove and chopped nuts. Mix all ingredients well.
    3. Pour into a well greased and floured cake pan. Bake for 1 hour or until a toothpick is inserted in middle of cake and it comes out clean.
    4. For topping: Whip the softened cream cheese until light and fluffy. Gradually add the confectioners' sugar and mix well. When cake is cool, spread topping over top of cake and sprinkle with ground cinnamon for garnish.
